[Thailand Recipes] Pad Thai From Koh Lanta

Pad Thai , also Phat Thai or Phad Thai is probably one of the most famous Thai dishes and is considered the national dish of Thailand. Every cookshop in Bangkok , on Koh Lanta or on Koh Samui and in Krabi serves Pad Thai. Whether with chicken, prawns, or purely vegetarian with vegetables and tofu, the fried rice noodles are available for every taste.



The name does not suggest it, but the roots of the Pad Thai noodle dish are not in Thailand , but in China. Both the noodles and the method of preparation are of Chinese origin, with the spices being typical of Thai cuisine . I brought the following recipe for you from my cooking class at Mon on Koh Lanta. If you don't like shrimp, you can of course prepare the Pad Thai with chicken or vegetarian. Have fun cooking at home!




INGREDIENTS FOR THE AUTHENTIC PAD THAI SAUCE:

  • 1 tbsp tamarind paste
  • 2 tbsp brown sugar
  • 1 teaspoon chilli powder
  • 70 ml of hot water
  • 3 tbsp fish sauce

INGREDIENTS FOR THE PERFECT PAD THAI FOR 2 PEOPLE:

  • 140 g flat rice noodles
  • 3 tbsp sesame oil
  • 1 small shallot
  • 1 clove of garlic
  • 1 teaspoon shrimp paste
  • 200 g small prawns
  • 2 spring onions
  • 1 egg
  • 5 tbsp roasted peanuts
  • 1 handful of bean sprouts
  • White pepper
  • 1 lime



PREPARATION OF THE CLASSIC PAD THAI SAUCE:


For the Pad Thai sauce, first heat the water in a saucepan and dissolve the tamarind paste in it. Then add the remaining ingredients. Season the sauce to taste and then set it aside for the time being.

For the Pad Thai, first soak the rice noodles in hot water for 5 minutes. The noodles should then still be firm to the bite. Peel and finely dice the shallot, peel and finely chop the clove of garlic. Wash and clean the spring onions and cut into 2 cm long pieces. Whisk the egg in a glass. Roughly chop the peanuts. Have all the other ingredients ready next to the stove.

Now heat 2 tablespoons of the oil in a wok and sauté the garlic and onions until translucent. Then add the shrimp paste and fry briefly. Then add the prawns and fry while stirring or swirling the wok. As soon as the prawns have taken on some color, you can add the rice noodles and about half of the pad thai sauce. Cook the noodles for about 1 minute while swirling the wok, then slide them into a corner of the wok.

Now put the rest of the oil in the wok and add the egg. Let the egg freeze briefly and then mix it with the pasta. Now add the bean sprouts, 2 tablespoons of the chopped peanuts and the rest of the sauce and mix everything well. Season the Pad Thai noodles with the pepper and maybe some fish sauce. Finally, fold in the spring onions and immediately distribute the Pad Thai on plates and serve.
