Vietnamese Lemongrass Chicken meatballs

INGREDIENTS
- 1 lb (450 gm) minced chicken breast
- Minced lemongrass, 2 stalk (white tender parts only)
- 2 teaspoon grated ginger
- 1 tablespoon chili garlic paste
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon coconut sugar (or white/ brown sugar)
- 2 tablespoon chopped cilantro (2-3 sprigs)
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/3 cup whole grain bread crumbs (or almond flour to make it low carb)
INSTRUCTIONS
- Add all the ingredients in a bowl. Mix well until everything comes together.
- Let it rest for 30 minutes until flavors develop.
- Preheat the oven @450F (230C).
- Form meatballs using hand (I used a tablespoon to portion my meatballs) and place them on a baking sheet lined with parchment paper. Repeat to make all the balls.
- Bake them in a pre-heated oven for 12-15 minutes until golden brown and cooked through.
- Serve them straight as an appetizer with a dipping sauce or pair with rice/ noodles.
