[Indian Recipes] Street Food - Aloo Tikki

Aloo Tikki Chaat is one of my favourite ways of enjoying Aloo Tikka.

Here’s how to make this delicious appetiser step by step.




WHAT IS ALOO TIKKI?

Aloo Tikki or Aloo Tikka {humble Indian Potato Patties } is made with mashed potatoes, herbs and simple spices.

But it is totally up to you, to weave in more ingredients in this easy Alu Tikki recipe like green peas, mixed vegetables or even stuff the potato cakes.

Potato Patties have a crispy layer on the outside and soft texture on the inside. This Aloo Tikki Recipe is served as Street Food in the North of India!

These crispy potato patties are great for Chaat too 



HOW TO MAKE ALOO TIKKI RECIPE?


Indian Aloo Tikka – To the Mashed Potato Patties, add simple Indian spices like cumin powder, red chilli powder, coriander leaves, green chilli, salt and some cornflour. You can also use rice flour instead of corn flour. Make small Patties and pan fry it.
HOW TO SERVE THIS SPICED INDIAN TIKKI ?

Aloo Tikki is also referred as Aloo Tikka, Aloo Patties, Alu Pattice, Aloo Pattices, spicy Indian potato cakes, potato cutlet and Indian potato patties

As I have mentioned before, this easy Aloo Tikki Recipe is quite versatile. It can be savoured in so many ways, the options are actually endless.

Tikki can be served on its own with a sprinkle of chaat masala, and chutneys.

One other way some people enjoy, is serving these potato cakes with Chole { Spicy Chickpeas Curry} and onions salad. Trust me, its just too good. I have en joyed this version from the street vendors in Delhi.

Serve Aloo Tikki Ragda { dried white peas }, chutneys and the dish is called Ragda Patties. This Indian street food is one of my favourite most.

The other way I enjoy my Tikki’s are in a streetfood dish called Dahi Aloo Tikki Chaat or Aloo Tikki Chole Chaat. To make this Tikki Chaat Recipe, stir the dahi or hung curd with spice powders.



HOW TO MAKE CRISPY ALOO TIKKI WITH STEP BY STEP PHOTOS

1. Boil the Potatoes in a pressure cooker / instant pot and peel the skin. You can also boil the potatoes on a stove top by boiling in enough water.

2. Mash the potatoes well with a potato masher.

3. Add Chilli Powder, Cumin Powder, Salt, chopped coriander leaves.

4. Add Cornflour to the potato mash.




5. Mix the ingredients well and bring them together like a dough.

6. Spread some oil between your palm. Pinch a portion of the potato mixture and begin rolling a ball.

7. With a gentle press, shape the potato balls into a patties.

8. Repeat the process for the rest of the potato patties.




HOW TO PAN FRY ALOO TIKKI?

9. Heat 2 Tbsp of Oil in a pan. Once the pan is hot, slide the potato cakes and fry them until they turn golden brown on one side.

10. Flip the patties and fry for another 3-4 minutes until the tikki turns golden brown. Drain them to a kitchen tissue.

**Edges will not be golden brown as we are not deep frying it.




HOW TO GRILL ALOO TIKKI?


11. Brush the pan and the potato patties with oil

12. Grill them for 10 minutes in total, flipping once.





CAN I MAKE THEM IN THE AIR FRYER?

Spray Cooking oil on the Potato Cakes. Place them in the air fryer basket and fry for 15 – 20 minutes at 200C, shaking the basket in between.

HOW TO DEEP FRY POTATO CAKES?

For Frying the tikki, heat oil in a deep pan and slide them in the hot oil.

Fry for a couple of minutes until golden brown. Drain on a kitchen towel and serve hot.

ALOO TIKKI RECIPE - HOW TO MAKE ALOO TIKKA?

Crispy Aloo Tikki are made with mashed potatoes, herbs and spices. Serve as an appetiser with various chutney's and masala chai.


Ingredients

  • 4 Medium Potatoes Boiled and skin peeled
  • 1/2 - 1 Tsp Chilli Powder
  • 1 Tsp Cumin Powder
  • 2 Tbsp Coriander leaves
  • 2 Tbsp Corn flour
  • Salt to Taste
  • 4 Tbsp Oil + more as needed

Instructions
  1. Cook the potatoes - Boil the potatoes in a pressure cooker or pressure cook on High for 6 minutes on Instant Pot, NPR. When the potatoes are still warm, peel the skin.
  2. Mash - Mash the Potatoes using a potato masher, making sure there are no lumps.
  3. Mix the ingredients - Add the spice powders, corn flour and salt and mix the potatoes mixture well.
  4. Make Potato Cakes - Apply some oil in between your palm. Pinch a portion of the potato mixture and shape the patties. Repeat the process with the rest of the mixture. I got 8 medium sized patties with the prepared potato mixture.
  5. Frying the Tikki | Potato Cakes - Heat 2 Tbsp oil in a pan.When the oil is hot, slide the potato cakes into the oil.Fry the patty until it turns golden brown. Flip them once and fry it until the other side also turns crispy and golden brown. Remove the crispy Aloo Tikki onto a kitchen tissue paper to absorb any extra oil.
  6. Serve hot Aloo Tikki with chutney's along with Masala Chai.
  7. If you like, sprinkle a fat pinch of chaat masala before serving. It is optional.
