[Thailand Recipes] Thai Red Curry with Shrimp

Craving Thai food? Make this 30-minute Easy Trader Joe’s Meal: Thai Red Curry With Shrimp! All of the ingredients can be found at your local Trader Joe’s store, from bottled red curry sauce to canned coconut milk to frozen shrimp. 



It’s the perfect quick yet healthy dish to prepare for a weeknight dinner or as part of weekend meal prep.




I’m mildly obsessed with Trader Joe’s, and I religiously shop there every Saturday morning. The staff even know me and my husband by name! Why do I love it so much? Well, the products are incredibly unique (and delicious), and the prices are great.

They also offer so many awesome prepared or semi-prepared items that make healthy eating and meal prep a cinch. So, I decided to share the tasty, healthy, and incredibly easy meals I often create using Trader Joe’s products with you all!

THAI RED CURRY WITH SHRIMP RECIPE

This red curry recipe is a real winner. I know I’m biased, but this might just be the best recipe I’ve created as part of this little series.




All of the credit really goes to the Trader Joe’s bottled red curry sauce, found in the condiments aisle. This was my first time trying it, and let me just say right now that it won’t be my last. The ingredients are clean and simple, and the flavor is spot-on to the taste of a curry you might order out at a nice Thai restaurant. Plus, it’s not too mild or too spicy. It’s just right.

Canned coconut milk is so versatile, and it adds significant creaminess to this curry. The coconut milk flavor is key in most Thai cuisine, so it’s a natural fit. Honestly, the recipe is so tasty on its own that it really doesn’t need much else, but I added onions, garlic, and a hefty handful of scallions and cilantro at the end to kick things up a notch.


ADD PRECOOKED SHRIMP (OR CHICKEN) AND SERVE WITH RICE OR CAULIFLOWER RICE

To add some protein, I simply defrosted a bag of the Trader Joe’s precooked medium sized shrimp, found in the frozen aisle near the fish. Since it’s already cooked, just add it to the curry at the very end, right before serving. (Just make sure you defrost it the night before or at least a few hours in advance.) Easy peasy! If you’re not a shrimp lover like me, you can easily substitute cooked chicken or tofu.

Last but not least, this recipe tastes amazing served over the Trader Joe’s jasmine rice, found in the frozen aisle. I prefer the frozen boxed varieties because they contain 3 separate bags of rice. This means you can use up a little bit at a time while keeping it fresh. Bonus: they only need a few minutes in the microwave to cook! If you’re keto or low-carb, cauliflower rice is a great choice, too.

Easy Trader Joe’s Meals: Thai Red Curry With Shrimp

Ingredients

  • 1 tablespoon olive oil
  • 1 cup onion, diced
  • 4 cloves garlic, minced
  • 2 red bell peppers, chopped into 2″ long strips
  • 2 green bell peppers, chopped into 2″ long strips
  • 2 13.5-ounce cans organic coconut milk
  • 2 11-ounce jars Thai red curry sauce
  • 1.5 tablespoons lime juice
  • 1 pound frozen cooked medium shrimp, defrosted
  • Scallions and cilantro to top, if desired
Instructions

  1. In a stockpot or Dutch oven over medium-high heat, add 1 tablespoon olive oil.
  2. Add the onion and saute for 3 minutes, then add the garlic and cook for 1 minute longer.
  3. Mix in the red and green bell peppers and cook for about 6-7 minutes, until peppers soften slightly.
  4. Stir in the coconut milk and Thai red curry sauce.
  5. Increase the heat to high and bring the mixture to a boil, then cover and lower the heat. Simmer for 10 minutes or until heated through.
  6. Add the lime juice and shrimp. Top with scallions and cilantro, if desired.
