[Thailand Recipes] Mango Sticky Rice

Thai mango sticky rice is made with sticky rice, a sweet, creamy coconut milk sauce, and served with tender slices of mango. Take one bite of this sweet treat and you’ll see why it’s a Thai favorite!




The weather here in Utah is in full on spring mode right now, and I am absolutely loving it! This spring has been so nice that I’ve been wondering for the past month if Mother Nature is just playing a cruel joke on us only to surprise us with a huge snowstorm. But, luckily she’s been pretty good so far.

As soon as it gets warm enough to spend time outside, Jacob and I go on a search for new hiking trails to try out, which is exactly what we did this last weekend. Ever since we moved to Northern Utah last summer, I’ve been itching to explore! We found a great little hike on Saturday, just a few miles away from us, which was the perfect cure for my spring fever. And although the hiking trail was covered in about 2 feet of snow, it was actually the perfect temperature for getting outside and enjoying some fresh air. Plus, we found a nice little waterfall at the top! Yeah, I am definitely feeling ready for summer now. Ice cream anyone?


Anyhow, in celebration of the spring season I decided to make Thai mango sticky rice! While on our trip in Thailand, we got to enjoy fresh mango sticky rice (and loads of delicious curry) and it was amazing. I’ve been craving it ever since we got home. And the other day I FINALLY found mangoes in the grocery store, so naturally, I had to pick up a couple just so I could share this recipe with you. I know mangoes aren’t exactly at their peak until around May or June, but I was still able to snag some that worked well for this recipe.

Traditionally, Thai mango sticky rice usually calls for glutinous rice, but I had trouble finding it. Well…that and I may have gotten a little lazy at looking… But, I think Jasmine rice makes a great substitute, plus it’s actually quite a bit cheaper than the other kind. So if you don’t feel like going on a wild goose chase through grocery stories looking for rice (I realize you can actually order it online, but I’m a bit impatient sometimes) or you just want a cheaper alternative, then this is the recipe for you!


Thai Mango Sticky Rice

Thai mango sticky rice is made with sticky rice, a sweet, creamy coconut milk sauce, and served with tender slices of mango. Take one bite of this sweet treat and you'll see why it's a Thai favorite!

Servings: 2 servings
Ingredients

1/2 cup jasmine rice
1 can coconut milk full fat
1/4 cup+2 Tbsp sugar
1 mango sliced
toasted sesame seeds optional

Instructions
  1. Cook rice according to directions on package, but swap the water out for coconut milk. This should be around 1 cup of coconut milk. Set any remaining milk aside. Stir in 1/4 cup of sugar.
  2. Simmer rice for 15 minutes, or until the coconut milk has been absorbed. Remove from heat.
  3. In a separate saucepan, warm the remainder of the coconut milk over medium-low heat for 5 minutes. Add 2 tbsp sugar. Stir until dissolved.
  4. Press cooked rice in a small bowl and turn over onto a plate. Serve with mango slices and drizzle with coconut sauce. Garnish with toasted sesame seeds if desired.
