I used a bit Gochujang (Korean hot pepper paste) to add color and enhance spiciness. You could replace it with cayenne powder. If you don’t like the dish to be too spicy, add a teaspoon of chicken stock powder instead. If you don’t have cheese, add several drops of sesame oil at the end of stir fry, and the nutty taste will balance the sour and spiciness of the dish.

Ingredients
3 tablespoon vegetable oil
2 cloves garlic, minced
200g kimchi, chopped
1 teaspoon hot pepper paste
2 teaspoon soy sauce
2 cups cooked rice (leftover rice is better)
1/2 cup of chashu, chopped
pinch of salt
2 pieces of cheese (mozzarella, cheddar, swiss cheese etc.)
2 big eggs

Instructions
Heat 2 tablespoons oil in a non-sticky skillet on medium heat, add garlic and saute till fragrant. Add kimchi (and kimchi liquid in the bag) and give it a quick stir. Add hot pepper paste and soy sauce, stir for 30 seconds till liquid is almost evaporated. Add rice and keep stir, while using the spatula to chop rice into smaller chunks. Add chashu and stir till everything mix well together, in about 3-5 minutes.
Add pinch of salt to taste. Turn off heat and place fried rice in 2 plates.
Add piece of cheese on top of each plate of rice, let the heat of rice melt the cheese.

In another non-sticky skillet, add the rest oil and eggs to make 2 sunny side eggs. Place egg on top of cheese, one egg for each plate. The heat of egg will let the cheese melt a bit more.
Garnish with black sesame and/or chopped green onion, serve immediately.
