[Thailand Recipes] Grilled Pork Chops

So in the spirit of easy summer cooking, we start off this month's menu with these incredibly flavorful Thai Grilled Pork Chops.

The Thai Grilled Pork Chops are soaked in a sweet-salty Asian-style marinade, and then coated with our Thai BBQ Seasoning – a combination of coriander, cumin, lemongrass, garlic, pepper, and smoked serrano chili.

Finally, a quick searing on the grill, and then a good 10 minute rest in the sun – for you and the pork chops – to allow the juices in the meat to redistribute, and the juices in your mouth to get ready for a delicious piece of grilled meat.

Thai Grilled Pork Chops

by Season with Spice
Serves 2

Ingredients: 

2 bone-in pork chops (about 3/4 inch thick)
2-3 garlic cloves – minced
1 tbsp reduced sodium soy sauce
1 tsp dark soy sauce (optional, but adds a more caramelized look and flavor)
2 tsp fish sauce
2 tsp honey
1 tbsp of Season with Spice's Thai BBQ Seasoning (a good 1/2 tsp for each side)
2 tbsp oil, plus extra for drizzling
Lime wedges

Method: 

1. In a small bowl, mix together minced garlic, soy sauce, dark soy sauce, fish sauce and honey. Marinate pork chops for 30-60 minutes, turning over once. Or marinade overnight in the refrigerator.
2. Remove pork chops from marinade, pat dry, and sprinkle both sides with Thai BBQ Seasoning. Let pork chops sit at room temperature while you preheat grill.
3. Oil grill rack, and place the pork chops on it. Baste the top lightly with the marinade. Grill pork chops for about 5 minutes, then turn over, and baste the other side. Grill for another 5 minutes, or until just cooked through (should be 145F). Remove from grill and let rest for 5-10 minutes – to allow the juices to redistribute.
4. Serve with some lime wedges and a Thai corn salad or green mango salad.
